Our pan roasted duck is heavenly in flavour, Our duck is pan roasted with very little fat, we use the extracted duck fat to cook itself on its own. sprinkled with salt and finally basted in butter sous vide to medium rare the flavours and texture are truly amazing. to finish off we baste our pan roasted vegetables in the duck fat and creating this heavily infused duck flavour in entire dishes contrasted with earthy aroma and flavour of the rosemary. Our sauce is a red wine orange honey sauce which works really well with the duck, the sweetness and the acidity of the sauce makes a good pairing for the duck. Enjoy
